I decided to create a platform for the blog called "Let’s Chat Local ” shining a light every other Wednesday on some of the incredible businesses and owners within the Coachella Valley. I have realized especially during this time how important it is to recognize the people within in our community who are living out their dreams while providing us with the products and services we love!

Q: Your Name

A: Lance and Marlo Q: Business Name

A: Biscuit & Counter Q: How would you describe your business/what you do?

A: We are biscuit makers and community builders

Q: How long have you had your business? A: About 7 months

Q: What inspired you to start your own business?

A: Lance has been a Bay Area chef for many years, and once the pandemic left us all at home all day everyday, he turned to his baking obsession and love for biscuits to keep busy and stay sane. After baking and sharing biscuits with friends, the response was so positive, we decided to start selling baker's dozen boxes and participating in Bakers Against Racism bake sales.

Q: What would you say sets you and your business apart from others in your field?

A: The craftsmanship and attention to detail. Lots of experimentation and thoughtfulness goes into the selection of ingredients, as well as baking techniques. We take a lot of pride in each batch of biscuits we create, and truly geek out on recipe iteration.

Q: Since COVID-19 set in what are the direct impacts you have felt? How have you pivoted? A: It is because of COVID-19 that we got our business off the ground. Biscuits are simple comfort food and people seemed to be craving this while stuck at home. Flour sales have increased by over 200% since the pandemic, so clearly we are all feeding our feelings with carbs!

Q: What is your ultimate dream for your business?

A: To have a small biscuit shop and play an active role in the community. We are new to the Coachella Valley and excited to call it our home.

Q: Do you have any new items, specials or deals you would like to share?

A: We are exploring different ways to spread our love for biscuits around the Coachella Valley, and hoping to start doing pop-ups where we can sell biscuit sandwiches for breakfast, lunch and dinner.

Q: Name one of your favorite local Coachella Valley businesses.

A: Wow, we have many! The artisan food community has been so welcoming and supportive. Breadsong Bakehouse has been a great friend to us, and we admire how The Heyday has built such a strong grassroots community following.
